Ground beef and ground turkey breast combine to yield a moist, tasty
meat loaf.
Cooking spray
1 cup finely chopped onion
3 garlic cloves, minced
1 cup dry breadcrumbs
½ cup fat-free milk
1 tablespoon Worcestershire sauce
1 teaspoon salt
½ teaspoon freshly ground black pepper
4 large egg whites
1-½ pounds ground turkey breast
½ pound extra lean ground beef
2 (10-ounce) packages frozen leaf spinach, thawed, drained, and squeezed
dry
½ cup ketchup
1. Preheat oven to 350 degrees.
2. Heat a large nonstick skillet coated with cooking spray over medium-high
heat. Add onion, and sauté 4 minutes. Add garlic, and sauté
30 seconds. Remove from heat. Combine onion mixture, breadcrumbs and
next 8 ingredients, stirring well.
3. Shape meat mixture into a 12 x 5-inch loaf on a broiler pan coated
with cooking spray. Brush ketchup over top of loaf. Bake at 350 degrees
for 45 minutes or until a meat thermometer registers 160; let stand
10 minutes before slicing. Yield: 8 servings (serving size: 1 slice).
